Last Thanksgiving we posted this recipe for Pumpkin Muffins that we found on Pinterest and I just realized that we never got back to you all with the results!
I couldn’t pass up these 2 ingredient pumpkin muffins. That’s right, just the cake mix and the pumpkin. No oil, no eggs, no water, nothing else.
It was super easy to whip together the cake mix and the canned pumpkin, but not so easy to scoop the mixture into the muffin tins. You see, the batter is super, super thick. You cannot just pour the batter, but need to use a couple of spoons to scoop it up and clump it into the tins. Not a big deal, just messy.
The pumpkin muffins were yummy, but not so pretty. They had more of a biscuit texture and look to them. I think next time I would try to add a bit more sweetness with chocolate chips since I found them to be slightly bland (this coming from a girl who adores pumpkin pie and has it ever year for my birthday!). On the plus side, my 3 year old loved them
